Maybe there are less expensive brands overseas? The brand of onion- and garlic-free tomato sauce I tried here in the U.S. was fine but not life-changing–and I’d expect life changing or at least pretty darn good out of a $10.00 jar of tomato sauce.

This easy, homemade low-FODMAP tomato sauce is just as good and not significantly harder than opening a jar. Step 1: Chop tomatoes and olives. Step 2: Mix with all other ingredients. Step 3: There is no step 3. You’re done.

It makes eight cups of sauce, or three to four jars’ worth. I froze the jars I didn’t use right away. This is terrible marketing, but I’m gonna say nah–it’s just good. Good for a quick and easy dinner where you just want to eat some pasta and move on with your life.

I’m all in favor taking time to cook a fancy meal for yourself and enjoying it–once in a while. But for the majority of my meals, I really just need to eat and then get back to grading or run off to swing dance or whatever else I’m doing. And having a meal you can just throw together quickly is hard in the elimination phase of the low-FODMAP diet.

Earlier this week I tossed this sauce with some gf rotini pasta, as well as some sauteed sausage, and topped it with Parmesan. Ingredients
  1. 1 28-oz. can crushed tomatoes
  2. 1 tsp. dried basil leaves
  3. 1 Tbsp. garlic-infused oil
  4. 3-4 large fresh tomatoes
  5. 1/2 tsp. black pepper
  6. Salt to taste
  7. 3/4 cup pitted kalamata olives
Instructions
  1. Chop tomatoes and olives. Mix all ingredients together in a large bowl.
  2. Freeze or heat and serve right away.

  1. YUM. I’m all about tomatoes right now. This sauce looks delicious and so simple to make. So basically, the two best things a recipe can be. And it has kalamata olives, which are my favorite!
